PREFACE With the rapid expansion of education and research programmes in agricultural processing and food engineering by the various State Agricultural Universities and other Government, Semi- Government and Private Institutions felt need for a textbook giving practical oriented exercises covering various aspects of agricultural processing and food engineering. This book is designed to introduce the basic concepts of various unit operations involved in agricultural processing technology to be used as a textbook in undergraduate courses and may also be used to assist postgraduate students, research scholars, field workers and process design engineers in acquiring thorough knowledge and proficiency in the field of specialization. The efforts have been made to make more clear understanding of theoretical concepts with the practical problems that will provide excellent opportunities to the students with their pursuance of academic excellence. The book contains about 200 well graded solved and more than 150 unsolved problems divided into four chapters covering all major fields of agricultural process engineering. In order to make the book relevant and practical oriented the authors have drawn problems heavily from question papers of various competitive examinations ARS, NET, GATE, etc. , manuals, bulletins, research journals and other possible sources. Attempts have been made to introduce SI system as far as practicable. It amply serves a widely felt need of a suitable and comprehensive book that will be an asset to the students and engineers engaged in agricultural processing as well as in designing the farm structures and planning the projects associated with agricultural processing industries. However, the constructive criticism and suggestions are welcome from all the quarters to make the book more precise and comprehensive.
