Preface Biochemistry is the field of science that concerned with chemical substances and processes that occur in plants, animals, and microorganisms. It involves the quantitative determination and structural analysis of the organic compounds that make up cells and of those that play key roles in chemical reactions vital to life. Biochemists study cells many complex and interrelated chemical changes. Examples include the chemical reactions by which proteins and all their precursors are synthesized, food is converted to energy, hereditary characteristics are transmitted, energy is stored and released, and all biological chemical reactions are catalyzed. Biochemistry straddles the biological and physical sciences and uses many techniques common in medicine and physiology as well as those of organic, analytical, and physical chemistry. It once was generally believed that life and its materials had some essential property or substance distinct from any found in non-living matter, and it was thought that only living beings could produce the molecules of life. Biochemistry is closely related to molecular biology, the study of the molecular mechanisms by which genetic information encoded in DNA is able to result in the processes of life.
