PREFACE One never knows when some significant event in one s life changes the course of their thinking, which propels and motivates them for taking an initiative in new activities. Meeting Dr S.S. Purohit was one such event in my life. The interaction I had with him instilled in me a spark to express a subject dear to me in a simple, concise and lucid manner. As a student, I always realised that there is a dearth of books dealing specifically with nutritional and therapeutic significance of foods having latest information. So, this textbook on foods and nutritional biochemistry has been written keeping in mind the importance and the absence of a recent book with latest information in this field. The scope of this book is not restricted to any specific area of readers it concerns people as varied as students to housewives, hotel management graduates to entrepreneurs and academicians to research scientists. In present era, it is very important to know the contents of food one eats to judiciously decide what to consume for a healthy living. The book is well framed including an introduction of foods and nutrition, macro and micro nutrients-their working, food processing and preservation techniques and nutritional and therapeutic significance of different foods for well being. The author has incorporated recent advances and developments with relevant data. The text in the book has been aptly supplemented with tables, charts and flow charts in order to make text clear and reading practical and easy. The book aims at covering all aspects of the subject. The author has tried to make it readable for light reading as well as preparing for exams. The book serves the answers to questions of inquisitive beings who want to understand the significance of different foods they see and consume every day.
